Pandan CUPCAKEs for St. Patrick's Day.

St. Patrick's Day identik dgn ...something 'green'. Jadi inget Chicago River yg di'hijau'in dalam rangka St Patrick's Day (krn di sana byk Irish imigrant). Begitu juga wkt ditawarin baking class project di sekolah Patricia, begitu dibilangin temanya St.Patrick's Day langsung kepikir yg ijo2 deh. Krn ujung2nya akan didecor ama anak2 dan mereka pun yg akan ngejualinnya (ngumpulin dana u/ Dengue Awareness Campaign), akhirnya sampailah sy pada keputusan membuat Pandan Cupcakes ini.
Resepnya sy adaptasi dari resep Frosted Vanilla Cupcakes-nya Martha Stewart.

Makes 12
1 1/2 cups all-purpose flour (spooned and leveled)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup sugar
2 large eggs
1/2 cup plain yoghurt
1/4 cup homemade pandan flavour *
green food color

1. Preheat oven to 350°. Line a standard (12-cup) muffin tin with paper liners. In a small bowl, whisk together flour, baking powder, and salt; set aside.
2. With an electric mixer, beat butter and sugar until light and fluffy, about 5 minutes. Beat in eggs, one at a time, until combined. Beat in pandan flavour & food color.
3. With the mixer on low speed, gradually beat in flour mixture and yoghurt in alternating batches, beginning and ending with the flour.
Divide batter evenly among prepared muffin cups.

4. Bake until a toothpick inserted in the center of a cupcake comes out clean and the top is springy to the touch, 20 to 25 minutes. Cool 10 minutes in the pan, then turn out onto a rack to cool completely before spreading with frosting.
Note: Yoghurt works in giving these cupcakes a moist crumb and slightly tangy taste.

* Homemade Pandan Flavour dibuat dgn merebus bbrp lembar daun pandan dalam sedikit air hingga mendidih dan wangi. (kurang lebih 15-20 menit).
Akhirnya jadilah 4 lusin Pandan Cupcakes itu dan sy bawa ke sekolahan. Mikir2 buttercream apa yg cocok yah? rasanya jarang bgt pandan cake dikasi filling. Dan sy pun cuma bawa whippy cream. U/ ngedekornya sy bawa green sand sugar plus ta' bikinin bendera2 kecil bertema St Paddy's Day u/ hiasan.

Ternyata seru bgt acaranya ngedecor cupcakes bareng anak2 TK. Sekelas yg mayoritas anak laki itu jadi heboh bgt...Mrk bawaanya pengen makan melulu, padahal cupcakes ini kan mo dijual keesokan harinya. Akhirnya sy potong 1 cupcake u/ 4 org. Belom lagi mrk excited nyobain gula yg bewarna hijau supaya lidah mrk bisa bewarna hijau juga. Tiap kali abis nabur gula mrk ngejilatin gula yg tertinggal di jari2nya. walaahh...

Hi! that pandan muffins looks delicious, i'm on the look out for anything to do with pandan. I can't read Indonesian language... but how does your muffins turned out? I wonder if i can use sour milk instead of yogurt. And how do i make the 1/4c homemade pandan flavor?

I am trying to make this pandan cupcakes. Wanna know how you bake until the top flat ?
Also can i omit the yogurt and uses milk instead ?
