Cheese & Ham MUFFIN

Muffin for lunch? Why not!
Sy termasuk org yg suka bosen ama nasi. Tapi gak lama2 sih, paling 1-2 hari gak makan nasi, udah kangen lagih. Hari ini, udah wkt makan siang... tp sy gak pengen makan nasi.
Kebetulan di rumah nyokap ada 2 buku resep muffin~ yg dah uzur sebenarnya, tp super-duper komplit. Bentuknya pun gak kayag buku resep masa kini yg full of beautiful pictures.
Akhirnya dibikinlah muffin ini u/ lunch. Cepet bgt, cuma nyampur2 - ngaduk2 bentar, masukin ke cetakan muffin, 25 menit kemudian dah jadi. Sy makan bareng ama 1 bowl buah2an (melon-pisang-anggur) dah cukup ngenyangin. Satu hal yg sy temui di buku kecil ini, bahwa ngolesin margarin/minyakin loyang muffin cukup di bagian dasarnya ajah, sampingnya gak perlu diminyakin, spy adonan muffin bisa merayap naik dan membulat atasnya.
(mmm spt teory bikin siffon cake kali yah). Muffin ini 'cruncy' bagian luarnya dan empuk bagian dalamnya. Source: Muffins, Scones & TeaCakes~Family Circle

1-3/4 cups self-raising flour
2 tbsp caster sugar
1 tsp baking powder
1 cup greated Cheddar Cheese *
1/2 cup chopped ham
1 egg, lightly beaten
3/4 cup milk
1/3 cup butter, melted

1. Preheat oven to 180 C. Brush oil into bottoms only of twelve 6 cm muffin tin.
2. Sift flour, sugar and baking powder in a bowl and stir in cheese and ham.
In a small bowl combine egg, milk and melted butter and mix well.
Add liquids all at once to flour mixture.
3. Stir gently with fork until all dry ingredients are just moistened.
Batter should look quit lumpy.
4. Spoon butter into each muffin tin, filling 2/3 full.
Bake 20-25 minutes until golden brown.
Loosen muffins with spatula and remove at once to a wire rack. Serve warm
